Raspberries, Vanilla Yogurt, Mint and Honey
Fresh and seasonal berries in the summertime are a treat on their own, and this recipe only emphasizes their goodness with a couple of very simple ingredients. This dessert slash snack takes takes all but a few minutes to throw together, looks gorgeous and can be modified to be vegan very easily. Here’s what you’ll need:
Ingredients:
1 cup raspberries, blueberries or strawberries
1 cup of greek yogurt or coconut yogurt
6 stevia drops (optional)
4 mint leaves
1 tsp fair trade vanilla extract
1 tsp wildflower local honey
Directions:
Add your yogurt, vanilla and stevia drops to a bowl and mix well (if you don’t have stevia drops, no worries— it just adds a bit of sweetness to greek yogurt which tends to be more bitter. If you’d like to compensate by adding more honey or some maple syrup instead, that will work.)
Distribute your yogurt between 2-4 bowls, top with berries, a drizzle of honey and a fresh mint leaf or two.
