10 minute recipe for gluten and grain free crackers
This is such a quick recipe with only a few ingredients, perfect for bringing to a gathering where you might not know about everyone’s restrictions or dietary preferences. Also ideal if you have a gluten intolerance or simply want to avoid mystery additives often found in crackers from the store. I’ve added thyme here but you can go any direction with this, really: add aleppo pepper, oregano, fennel seed or whichever spice you’re enjoying at the moment which might best compliment your cheese board or dip.
Ingredients:
1 & 1/4 cups almond flour
1/4 tsp salt
1/2 tsp thyme
1 tsp nutritional yeast (optional)
1 large egg, beaten
2 Tablespoons unsalted butter melted (coconut oil also works)
Directions:
Preheat your oven to 400ºF. Line a large baking sheet with parchment paper or a silicone mat.
In a medium bowl, mix the almond flour, salt, thyme and nutritional yeast if using. Add in the butter and egg until well combined and smooth— the dough will still feel a bit sticky.
Place the dough between two sheets of parchment paper or silicone mats and use a rolling pin to flatten the dough to about 1/8th inch thick.
Slice the dough into 1 inch squares and arrange them on the lined baking sheet.
Bake at 400ºF for 5-10 minutes or until golden brown and let cool for a few minutes to continue crisping up.
Serve with your favorite cheeses or dips— enjoy!
