Whenever I’m making a very involved or very rich main dish for a dinner party, this is the salad I gravitate toward. It’s also a favorite as a quick lunch for two and something casual but impressive to make if someone comes over last minute. If there are three things I’ve always got in my fridge, it’s pecorino, castelvetrano—or some sort of—green olive, and little gems or baby lettuces. This salad resembles the picturesque salads served at restaurants and the secret is a zester for a soft, light, fluffy mountain of cheese.
