A quick coconut flour-based treat


Banana bread is a real tried-and-true dessert and I’ve still yet to meet someone who doesn’t thoroughly enjoy it. This recipe doesn’t take too long to put together and makes for a lovely morning treat with your coffee as well as a satisfying dessert to end the evening. Hope you enjoy this one!


Ingredients

  • 3 medium ripe bananas, mashed (about 1 1/4 cups)

  • 1 tsp vanilla extract

  • 1/4 cup peanut butter

  • 2 large eggs at room temperature

  • 1/2 cup coconut flour

  • 3/4 tsp baking soda

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • 1/2 cup chocolate chips or crushed chocolate, I like to use Hu


Directions

  1. Preheat your oven to 350ºF and grease an 8”x4” loaf pan with coconut oil or line with some parchment paper.

  2. In a large bowl, whisk together bananas, vanilla and peanut butter. Mix until smooth and creamy.

  3. Add your eggs in one by one and mix until well combined. While continually mixing, add in your coconut flour, baking soda, cinnamon and salt. Once combined, fold in your chocolate chips until just mixed in.

  4. Pour your batter into the pan and smooth out the top. Add a small handful of additional chocolate chips to the top if you’d like. Bake for 25-30 minutes or until a toothpick inserted into the bread comes out clean.

  5. Remove from the oven, allowing it to cool on a wire rack for 15-20 minutes. Carefully remove and let cool completely on the wire rack and serve warm. Enjoy!
