Paleo Blueberry Chocolate Muffins

A 20-minute recipe with some simple ingredients



Good morning! Hope your week is off to a beautiful start. I was craving some blueberry muffins - but also some chocolate chip muffins - this morning so I decided to combine the two and make a quick paleo treat to snack on throughout the day. Here’s what you’ll need:



Ingredients:

  • 2 cups almond flour (super-fine preferable)

  • 1/4 tsp. salt

  • 1/2 tsp. baking soda

  • 1/4 cup coconut oil at room temperature

  • 1/4 cup maple syrup or honey

  • 3 large eggs at room temperature

  • 1 tsp. pure vanilla extract

  • 1/4 cup organic blueberries

  • 1/2 cup paleo chocolate chips, like Pascha or Hu chocolate



Directions:

  • Preheat your oven to 350ºF and grease a muffin pan with coconut oil.

  • In a large mixing bowl, whisk together almond flour, salt and baking soda.

  • In a separate, smaller bowl, whisk together the coconut oil, maple syrup or honey, eggs and vanilla extract.

  • Fold the blueberries and chocolate chips in, then use a cookie scoop to heap equal amounts of batter into each space in the muffin pan.

  • Bake the muffins for 15-20 minutes, or until a toothpick inserted comes out clean. Briefly let cool — enjoy!


Note: the muffins can be stored in an airtight container at room temperature for a few days.
