My take on Marianna’s Coconut Cloud Smoothie from Erewhon



As soon as I saw this smoothie pop up on Erewhon’s Instagram account as a part of a collaboration with Marianna Hewitt, I knew I needed to create my own version at home. The original recipe calls for coconut cream, avocado, almond butter, banana, blue majik (spirulina), pineapple, vanilla collagen, vanilla and stevia. I made a few changes and opted for a slightly less-blue hue but you could always add a bit more spirulina if you want to emulate the color from the video. And here’s the blender I use: I go through all of the reasons why I love this blender if you’re on the fence or wondering if it’s worth the purchase on this post!


Ingredients:

  • 3/4 cup coconut milk

  • 3/4 cup coconut cream, divided

  • 3 Tbsp. Golde coconut collagen

  • 4-6 vanilla stevia drops or to taste

  • 1 frozen banana

  • 1 1/2 cups frozen pineapple chunks

  • 1 cup frozen aloe vera pieces

  • A few dashes of spirulina powder, blue majik powder or similar

  • 1/2 cup coco whip, divided


Directions:

  • Add coconut milk, half of the coconut cream, collagen, stevia drops, frozen banana, pineapple and aloe vera to the blender with a small dash of spirulina powder.

  • Blend well, adding a little bit more coconut milk if necessary to get the smoothie fully blended through.

  • Add the other half of the coconut cream evenly between two glasses, following with 1-2 drops of vanilla stevia drops and mix well. Top with a small dash of spirulina powder, just to cover the top.

  • Pour the smoothie in over the coconut cream/spirulina and top with scoops of coco whip. Enjoy! And here’s my video going step by step.
