Kinda Like a Blueberry Pie

But you can eat it for breakfast
Making yogurt taste new and exciting is somewhat a passion of mine: I often look to my favorite desserts for inspiration, and today, I felt like eating blueberry pie, but I wanted it for breakfast. If you’d like to spend the extra time, you could add an almond flour-cinnamon crumble of sorts for the full effect, but I love it as-is for a quick and delicious treat, whether eaten first thing in the morning or as a dessert to round out the day.
Ingredients:
FOR THE Compote
2 cups blueberries
1/4 cup sugar or sugar alternative of choice
3 Tbsp water
1 Tbsp fresh lemon juice
FOR serving
1/2 tsp pure vanilla extract or about half a dropper of vanilla stevia drops
3/4 Cup Greek yogurt (or use sweetened Greek yogurt and skip the vanilla extract)
Dash of cinnamon
Fresh mint
A little lemon or orange zest
Start by adding the blueberries, sugar, water and lemon juice to a saucepan and cook over medium-low heat for 10 minutes, stirring frequently. Lower the heat and cook for an additional 8-10 minutes, then remove from heat.
Add your yogurt to a bowl (if already sweetened, leave as-is) and add the vanilla extract or stevia drops, mixing to combine.
Add the blueberry compote to the bowl, top with a dash of cinnamon, a little bit of zested orange or lemon, and a leaf or two of fresh mint. Enjoy!
