In September 2015, in Ghent, Belgium, Le Botaniste opened a plant-based organic food and natural wine bar in a reinvented 19th-century styled pharmacy: four months later, their first US store opened its doors in the Upper East Side Of New York City.
Their mission is to provide pure, plant-powered organic meals that are good for your body and the planet, and they offer a unique opportunity to experience a different way of eating vegetables and discover new flavors and textures. A creative and colorful menu shows that organic plant-based food can lead to surprising, healthy and mindful new eating experiences. Le Botaniste is 99% organic, 100% plant-based, gluten-free friendly, and they serve only natural wines— helping you bring more plants, vitamins, and nutrients into your diet and helping keep your body energized and healthy while protecting our planet.
They generate as little waste as possible and are constantly improving upon their sustainability standards. In 2016 they partnered with CO2logic® to reduce their energy use and to offset 100% of their greenhouse gas emissions by supporting a Gold Standard certified climate project in Ghana that distributes efficient cookstoves.
On World Tree day 2021, they planted the Le Botaniste Forest, in partnership with GoForest. Planting trees helps to capture carbon, fight climate change, restore biodiversity and provides work for local communities. If you dine in, you can choose to plant a tree with your meal.
On key environmental dates, Le Botaniste matches guest donations with an extra tree per tree donated, and they plant a tree for each member of their company.
While their menu changes seasonally, we wanted to share a peek into what a typical spring dinner offering might look like:
Magic Miso: Gluten-free noodles, miso broth, green peas, free range tofu, root vegetables, served with ginger velvet dressing
Veggie Sushi Roll: Nori, quinoa and rice, pickled ginger, wasabi, red sauerkraut, turmeric onions, marinated tofu, vegetable mix, served with ginger velvet dressing, saffron aioli
Green Pea Hummus: Green peas, cashew, mint, tahini, spirulina, red cabbage. Served with gluten-free cracker
Red Fruit Chia Pudding: Coconut milk, chia seeds, agave. Served with a berry compote
Apple Volcano: Shredded apples, chia seeds, flax seeds, cinnamon. Served with a cashew cream
