Happy Wednesday! I’ve been getting back into the swing of things after a week+ out of town where I was eating and drinking my way through Portland. It was our first time back since moving away two years ago, so it only made sense that we returned to literally every spot there that we possibly could. There were simply not enough hours in the day, but we made a solid dent, I’d say. The trip offered tons of inspiration and dishes I’m ready to recreate at home, which I’ll share with you here :) I’ve been focusing on more causal meals my first week back home and thought I’d round them up should you be looking for some lowkey dinner inspo, yourself.



Sweet Potatoes with Tahini & Microgreens

I keep several varieties of sweet potatoes on hand at all times, my favorite being Japanese sweet potatoes, so I can throw together some sort of miso-tahini dressing and greens for a low-effort meal. This recipe is made even easier if you follow the corresponding meal-prep tip.



Gochujang Buttered Noodles

Love this recipe as well as peanut noodles when I’m craving some sort of takeout noodle situation but I’m committed to cooking instead of ordering in. Making these tomorrow 🫡
