The perfect snack to repeat all summer long

This is the very beginning of peak stone fruit season and the first of many recipes I’m making with it as the focal point this summer! This is my most-coveted time of year, produce-wise, and I’m convinced that apricots and burrata are the most perfect pair— if I’m making a salad, an appetizer for a crowd, or a simple afternoon snack… This is what I want all summer long. The sweetness of the apricots complements the creaminess of the burrata, creating a delicate balance of flavors, especially when tossed with your favorite herbs, some lemon or lime zest, lots of good olive oil, and flaky salt. Burrata pairs so well with juicy, slightly tangy stonefruit— you should definitely try some other iterations using plums, pluots, and peaches in the months to come. This is pretty simple in the sense that you can adjust everything to taste: add more mint or interchange it for dill, add more or less lime zest, or use a different stone fruit based on what looks good at the store. Pair this with some griddled or grilled crusty bread or dive in with a fork. This recipe serves two.


Ingredients:

  • 5-7 apricots, thinly sliced into wedges

  • 1 ball of burrata, drained

  • Mint, about 10 leaves

  • Olive oil, for drizzling: you can’t go wrong with Brightland, California Olive Ranch, or essentially anything from your local market.

  • Flaky salt, for serving

  • Lime zest, to taste

  • Pink peppercorns, to taste


Directions:

  1. Add your sliced apricots to a shallow bowl or serving platter, followed by a drizzle of olive oil. Sprinkle a pinch of flaky salt all over, followed by a few zests of a lime.

  2. Add the burrata on top and repeat, focusing on adding a couple of generous pinches of flaky salt directly to the burrata, plus another glug of olive oil. Grate a bit more lime zest over the whole plate and finish with a couple of twists of pink peppercorns and a little more flaky salt. Top with additional mint if you’d like. Enjoy!
